Basically, the production processes in PT. Teja
Sekawan Cocoa Industries can be divided into 3
(three) stages as follow :
1. First stage (cleaning, pre-drying, breaking
and winnowing) :
The cocoa beans (the raw materials) must be
separated from other particles such as stones,
metal, etc. After the separation, the beans
would be heated up to 100° C or to reach 3 % of
water content in the beans, at this stages all
the debris should have also gone.
The process continues by putting the beans through
the breaker, then the shell and the nibs would
be separated (winnowing process).
The winnowing process is done 3 (three) steps, to
make sure the shell attached to the nibs is
minimum.
